These are an inspired mash-up of these two beloved classics. Super simple to make, too. The shredded carrots add color and moisture to what is a fairly traditional oatmeal cookie recipe. We have raisins and walnuts added, in addition to unsweetened coconut. Make sure to use unsweetened coconut, because sweetened will put the cookies way over the top in sweetness level. The cream cheese drizzle is truly not necessary. These cookies are delectable without it, but if you take the time to make it, people will be extra thrilled. Frequently Asked Questions Variations You can leave out the raisins, and/or the nuts. Your cookie yield will change slightly. Please do not leave out the coconut, as it adds texture to this recipe that makes it work as well as it does. You could try leaving it out, if you must, but I […]

Low FODMAP Chocolate Thin Mint Cookies – Girl Scout Copycat https://www.fodmapeveryday.com/recipes/low-fodmap-chocolate-thin-mint-cookies/ https://www.fodmapeveryday.com/recipes/low-fodmap-chocolate-thin-mint-cookies/#respond Fri, 26 Jan 2024 11:00:00 +0000 https://www.fodmapeveryday.com/?post_type=recipe&p=80723 Our version of Low FODMAP Chocolate Thin Mint Cookies is a Girl Scout copycat, made gluten-free! A crisp chocolate cookie, flavored with peppermint, fully enrobed in chocolate, further enhanced with mint. I originally developed this recipe for Bon Appetit magazine in 2001 but updated it to be gluten-free and low FODMAP diet compliant. I served these to many non-special diet folks, and everyone raved. Take Advantage of Make-Ahead Steps There are several do-ahead steps, which makes this recipe easier than many other renditions. We have seen many versions that have you roll out the dough, cutting out the cookies with a cookie cutter, but I found that forming a roll and creating a slice-and-bake approach is much easier. Making Low FODMAP Chocolate Thin Mint Cookies For Cookie Dough: Whisk flour, cocoa, and salt in medium bowl to blend; set aside. Using electric mixer, beat butter in large bowl until smooth. Beat […]

Low FODMAP Mint Brownies https://www.fodmapeveryday.com/recipes/low-fodmap-mint-brownies/ https://www.fodmapeveryday.com/recipes/low-fodmap-mint-brownies/#respond Wed, 17 Jan 2024 22:46:31 +0000 https://www.fodmapeveryday.com/?post_type=recipe&p=80756 Are you an Andes Mints fan? These Low FODMAP Mint Brownies are like Andes Mints in brownie form. These differ from our Low FODMAP Peppermint Brownies as those feature crushed peppermint candies (like candy canes). These have a rich brownie base, a creamy mint filling (tinted green), and a butter-based dark chocolate ganache topping. While these look fancy, they are a simple brownie, an easy frosting, and a quick-to-make glaze. If you look at it as three separate components, it will hopefully make sense and appear less daunting. The only “trick” is that they do need chilling time before the frosting is put on, and again before and after the glaze is applied, so plan accordingly. The times given in the recipe reflect these waiting/chilling times. And if the green color of the mint filling is too vivid for you, you can use less green food coloring. I think they […]

The molasses in the recipe is in a low FODMAP amount, if you stick with our serving size. Is Molasses Low FODMAP? Molasses is one of those foods that you might hear is low FODMAP, but it all depends on serving sizes. Both Monash University and FODMAP Friendly have lab tested molasses. Neither details what kind. Their low FODMAP serving sizes range from 3 g to 5 g. The Monash suggested amount of 5 g is equivalent to 1 teaspoon. Molasses contains both fructose and fructans. Make sure to read the recipe though before starting. The cookie dough requires a 4-hour chilling time, and is perfect if chilled overnight. Is Dark Chocolate Low FODMAP? Yes it is! Monash University has lab tested two kinds of dark chocolate and each […]

If you stick with the suggested serving size of this recipe, these bars are low FODMAP. Look at the low FODMAP serving size below. It is generous! They also feature browned butter, which lends a nutty flavor, and maple syrup and cinnamon complement the apples perfectly. The brown sugar gives caramel notes. It’s everything you want in an apple bar! And these happen to be gluten-free, too. Note that you will be browning butter at the beginning of the recipe and then dividing it up; some is used for the bars, some for the frosting later on. Both Monash University and FODMAP Friendly have lab […]

Low FODMAP Chewy Oatmeal Raisin Cookies https://www.fodmapeveryday.com/recipes/oatmeal-raisin-cookies/ https://www.fodmapeveryday.com/recipes/oatmeal-raisin-cookies/#comments Tue, 21 Mar 2023 12:43:14 +0000 https://fodmapeveryday.wpengine.com/?post_type=recipe&p=724 These Are an Old-Fashioned Chewy Oatmeal Raisin Cookie The whole rolled oats (not quick or instant oats) are in a higher proportion than the gluten free flour mixture, adding to the heartiness and oat-y nature of this cookie. The nuts are optional, but if you do use them, make sure they are fresh and lightly toasted for best flavor and texture. Chilling the dough for at least two hours allows the oats to absorb moisture and this goes a long way towards creating the desirable chewy texture, aiding in the dough holding its shape and creating nicely shaped round cookies. Cream Or Melt the Butter? And by the way, we also tested this recipe by creaming the butter in the classic manner. Not only was this more work, but the results were imperceptibly different and in many cases testers preferred the melted butter version. This is the kind of fun, […]

Great recipes never die. They get reinvented! This recipe has a dark chocolate brownie base and swirls of lightly spiced lactose-free pumpkin cheesecake batter throughout. Sweet, a bit tangy, smooth, rich and creamy.  These freeze well and in fact, I happen to love them when they are super cold, but they are a bit creamier if you remove from fridge a while before serving.
